The main purpose of having a second network adapter in the server is for redundancy and high availability. We recommend connecting the two 10g links coming from the server to two separate 10g switches for this reason as well.
Since you only have a single switch, I'd lean toward connecting just a single 10g uplink from each server to your existing switch. It's worth considering adding a second 10g switch as well for high availability.
It's not possible to separate the data and management of the CVM between the 10g and 1g at this time.
