・metadata(json) download from Nutanix Portal. Can I do that Hypervisor ISO file there ?
・What difference are metadata(json) each ?
・Use Hypervisor ISO file of Evaluation version, is it OK?
・ISO's language adapt any languages? or English only?

ISO file you need to download from VLSC or MSDN.
・What difference is metadata (json) each?
JSON only have 1 version of Hyper-V ISO each based on your downloaded ISO. The JSON file usually matches 1 of the ISO files available oim MSDN / VLSC.
・Use Hypervisor ISO file of Evaluation version, is it OK?
Not supported.
・ISO's language adapt any languages? or English only?
All available language in the ISO. Depends which ISO you download from MSDN,.
