Sorry to have to post this, but can't find any documentation on how I actually enable EX-X? I am at 4.1.1.4 but upgrade if required. Just trying to figure out how to turn it on?

Erasure coding was introduced as a Tech Preview feature in NOS 4.1.3.
You can enable it as an Advanced Setting when you create or modify a container:
