I noticed that Nutanix REST API v3 offer ability to interact with Nutanix Projects. The same features seem not to be available using the new API v4 so far. Will this come in the future? Is there a roadmap with all the features that will be coming in API v4?

From what I can tell, the Nutanix REST API v4 doesn’t currently support full interaction with Nutanix Projects like v3 does. It seems the v4 API is being rolled out in phases, and not all features have been carried over yet.
I haven’t seen a specific public roadmap for when Project support might be added to v4, but Nutanix usually shares API updates in the release notes. I’d recommend keeping an eye there, and if it’s a critical feature for you, it might be worth submitting a feature request through your Nutanix support contact.
