I have CE 2.1 installed and running nested in ESXi 7.02 but when trying to power on VMs, I notice under the Hardware tab it shows CPU oHz and memory 0Gib.
I do have VM tools installed

Where did you installed the vmware tools in??
On the AHV nested host
Wow, oke. So AHV and AOS are system you should not temper. You can read that as you login on the box. So installing vmware tools on AHV is not something you should do.
