Ifso, I think it is better to involve a Nutanix partner from the region you are located.

About the 3 foundations you are talking. That is all up to you. Foundation is the software you use to install the hypervisor and CVM and even to create the cluster itself. You can run in in a virtual machine (on your laptop, some hypervisor in the data center), or local installed on you windows machine or even mac os. That all depends on you current policy in the datacenter. (are laptops allowed in there? are you installing somewhere else then datacenter, etc etc).
So better is to involve a nutanix partner.
first confirm compatibility of your nodes with Nutanix:

for deployment as @JeroenTielen mentioned, you can use any of them, if this is a one time job, go ahead with foundation for windows, if this is something you will do usually, go for standalone foundation VM.
when you are doing the foundation,you will need AOS and AHV (assuming from your first post) files,
you will need to have list of IPs during your foundation.
CVM IP,AHV IP, IPMI IP,
my recommendation is that you enable nodes to a flat switch, (two cables for each nodes and one from your station to same ), cables should be connected to IPMI port and one of network card (the nearest to IPMI).
if you have different subnet used for your IPMI and AOS/AHV(these two should be in same subnet),then add them to your workstation/foundation VM before starting the foundation
during foundation, don't select VLAN, once foundation is done you can change VLAN for your CVM ,AHV if required.
