What is the minimum number of nodes needed to configure a Replication Factor of 2 (RF2)?

you can have the 2 Node cluster if workload is very small or branch office. but you can't expand the 2 node cluster. 

Nutanix Support might need to engage to convert 2 node cluster to 3 node cluster. only supported 2-Node models are 1175S.

Yes, 2 node cluster will tolerate 1 node failure
