For future reference Nutanix support said it is not possible to migrate the data to a new remote site (when re-creating it), it must be replicated from the primary cluster again. Nutanix support provided me a script to run to upgrade the instance type also - so if this is something you need probably best to log a support call.
Just as a followup to this, it seems that the aws machine generations are designated by the number following 'm'. So m1, m2 etc. For whatever reason configuring the remote site provisioned an older generation instance. I'm in contact with Dell/Nutanix support to update the instance type, I'll try to remember to post back if it was successful and if existing data was preserved.

The pre/post scripts are defintely useful however it's more about how to convince exchange it's been backed up. As far as I know I have limited options involving circular logging, windows server backup Just as general feedback it feels a bit jarring coming across from an application aware backup program to snapshot based backups. SQL is less of an issue but Exchange is a pretty big deal and even the Nutanix guide only has this to say from section 7.8 on Backup and DR: "Nutanix takes a VM-centric approach to data protection and disaster recovery, complementingMicrosoft Exchange database availability groups. Nutanix uses VM caliber snapshots, alongwith protection domains, to back up your Microsoft Exchange deployment. A snapshot is apoint-in-time copy of a single virtual disk or VM, or of a group of virtual disks and VMs. Virtualdisks are grouped together in a Nutanix protection domain." Fr
